HARVEST TIME:

From the mid to the end of august. It’s critical to identify, according to appropriate ripening indices, the proper day to start harvesting grapes in order to get a balanced product, with the appropriate rate of acidity, strength and body.

HARVEST:

Manual, in pierced crates, with grapes selected in the vineyard and immediately put into the pneumatic press.

SPARKLING WINEMAKING PROCESSES:

The grapes harvested in crates are, within a few hours, subjected to a brief skin contact in order to obtain a delicate color and aromatic finesse. This is followed by a gentle pressing, carried out through careful manual programs, to obtain a fresh juice that, within a few hours, settles and becomes clear, separating from the solid parts. Through the skilled use of biotechnologies and cold stabilization, a slow alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of 13°C. In spring, the resulting wine is bottled, where the prise de mousse occurs; the bottles are then stacked in dedicated underground galleries where the temperature remains constantly around 12°C. After at least 30 months of aging in these underground cellars, our ALTA LANGA is ready for remuage and disgorgement operations.

CHARACTERISTICS:

The color is pale and bright pink, with a fine and continuous perlage. On the nose, it reveals elegant notes of small red berries, citrus, dried fruit, and yeast. The palate is dry, fresh, and savory, with good structure and a clean, persistent finish.

FOOD PAIRINGS:

Ideal as an aperitif, it pairs elegantly with raw fish, shellfish, delicate seafood dishes, and white meats.
