JUST AND ONLY PINOT NOIR
A bold choice that fully expresses the authentic identity of Alta Langa Pinot Noir.
From the siliceous-calcareous hills come hand-harvested grapes, gently pressed to preserve purity, elegance and fragrance.
Slow fermentation takes place in stainless steel tanks and partly in French and American oak tonneaux, adding depth and aromatic complexity.
Part of the must is naturally concentrated and later used as the exclusive source of sugars for the second fermentation in bottle, replacing sucrose and enhancing the wine’s authenticity and territorial character.
Aging for 36 months in underground galleries at a constant temperature of 12 °C creates a fine and persistent perlage, together with elegant aromas of bread crust, honey and dried fruits.
Creamy, savory and structured on the palate, it achieves a perfect balance between freshness and softness.

HARVEST TIME:

From the mid to the end of august. It’s critical to identify, according to appropriate ripening indices, the proper day to start harvesting grapes in order to get a balanced product, with the appropriate rate of acidity, strength and body.

HARVEST:

Manual, in pierced crates, with grapes selected in the vineyard and immediately put into the pneumatic press.

SPARKLING WINEMAKING PROCESSES:

The grapes collected in the crates are, after few hours, gently pressed according to careful manual programs in order to get a fresh juice that, within some hours, settles and becomes clear, separating from solid parts. Before the slow alcoholic fermentation in stainless steel tanks, part of the must is naturally concentrated and preserved to become the exclusive source of sugars for the second fermentation in bottle, replacing sucrose. After 36 months of ageing on the lees in underground galleries at a constant temperature of 12°C, the wine develops a fine and persistent perlage together with remarkable elegance and aromatic depth.

CHARACTERISTICS:

The color reveals an exceptional perlage of light gold. The nose offers intense and complex scents of bread crust, honey and dried fruits. Creamy, savory and structured on the palate, with excellent balance between freshness and softness.

FOOD PAIRINGS:

Perfect to be enjoyed in every moment of the day, it is a premium aperitif wine. It pairs perfectly with any dish of fish or shellfish, and it is also exceptional when paired with black squid ink risotto or with a tasty cheese fondue covered of Alba white truffle.
